Pueblo Chicken Sandwich

STEP 1: LIME MAYO

Add egg to bowl and blend. Add lime juice, mustard, and salt and blend. Slowly add the oil while whisking.

STEP 2: CHICKEN

Cut chicken into cutlets. Season with garlic, onion, and chili powder, salt, and pepper. Grill over medium heat for 3-5 mins each side until the internal temperature reaches 165F.

STEP 3: PEPPERS

Add peppers to coal bed and cook for about 10 mins until fully charred. Transfer peppers to a bowl and cover with plastic wrap. Let peppers steam for 15-20 mins. Scrape off the charred exterior of the peppers, then deseed and slice.

STEP 4: SANDWICH

Preheat the griddle over medium heat. Spread some lime mayo on one side of each piece of bread. Lay the mayo side down on the griddle. Then add some shredded cheese, a chicken cutlet, peppers, a drizzle of lime mayo, more cheese, and the other piece of bread with the mayo side facing up. Cook for a few minutes until browned, then flip the sandwich and cook on the other side.
